Notes of wild strawberry, raspberry and sour cherries are lifted by floral tones of dried rose petals, hibiscus and orange blossom filling the nose of this brightly colored dry Rosé. The palate is surprisingly rich with pomegranate and perfumed apricot. A suggestion of tannin helps to fill the mouth with lovely red berry fruit touched and a hint of blood orange. PRODUCTION NOTES Production: 97 cases of 750 mL bottles Specs: 13.5% Alcohol, 3.6 pH, 100% Stainless Steel Harvested: October 2011 WINEMAKER NOTES In the process of producing our Pinot Noir Blanc, we realized that there was going to be a fair amount of juice towards the end of the pressing process that would have too much color and tannin for the Blanc project. The juice was placed into a separate stainless-steel tank, settled, racked off the heavy sediment and then inoculated and fermented to complete dryness. In addition, a small amount of wine was extracted from the one ton of fruit that was fermented as a full red Pinot Noir (a "Saignée") and added to the Rosé fermentation to brighten up the color. We aged this wine on its lees for six months with repeated stirring to produce a delightfully dry Rosé that hints at just the "spirit" of Pinot Noir. |
